Coconut muffins with chocolate glaze
Method
Preheat the oven to 200°C.
Butter a 12-hole muffin tin well.
In a large bowl, mix the flour, baking powder, butter and sugar for 1 minute using a hand mixer.
Add the eggs, milk, orange juice and orange zest and keep mixing with the mixer until smooth.
Add the coconut and mix for another half a minute.
Fill each hole about two-thirds full with the mixture and put them in the oven for 25 to 30 minutes.
Leave them to cool for 5 to 10 minutes and remove them from the tin.
Meanwhile, make the chocolate glaze. In a pan set over another pan of boiling water (bain-marie), melt the chocolate with the butter and icing sugar, then take it off the heat.
Leave the chocolate glaze to cool slightly for 1 minute and then carefully spread it over the muffins. Use a brush to cover the sides.
Leave for about an hour for the glaze to set and serve sprinkled with coconut.
