Cuttlefish in tomato sauce with short macaroni
A very tasty way to combine pasta and seafood.
Method
Cut the cuttlefish into rings and season with salt and pepper.
Add the olive oil to a pan and lightly sauté the onion.
Add the cuttlefish, stir well and deglaze with the wine.
Add two glasses of water and leave to simmer over a low heat.
Cuttlefish takes a while to soften, so leave it to simmer for at least an hour and a half, adding a little water now and then so there is always some sauce.
When the cuttlefish has softened, add the tomatoes and season with salt and pepper.
In another pan, boil the macaroni in salted water.
Five minutes before they finish cooking, drain them and add them to the pan with the cuttlefish.
Leave them to cook with the cuttlefish for five to six minutes, always over a low heat and stirring often so they don't stick, then take the pan off the heat.
